How to Make Cauliflower Rice (and What to Do With It)

Intrigued by the growing trend of cauliflower rice? Try this: Grate cauliflower florets using a box cheese grater or food processor until it resembles rice. It’s a good way to lighten your carbohydrate load while upping the vegetable intake. Treat it like you would regular rice: using it as the base for curry; folding it into a burrito; or simply drizzling it with olive oil and seasoning with salt and pepper. Here are a few more ideas to get you started.



  • Toss it raw into salads, or sprinkle on hummus. Toast in a cast-iron skillet or baking sheet with olive oil, salt, and pepper, then stir in roasted, chopped vegetables and a squeeze of lemon or lime (below).
  • Microwave one cup “rice” for 3 minutes for the base of a grain bowl. Layer with sautéed vegetables, a protein (such as shredded chicken), and a vinaigrette dressing.
  • Throw together a healthy fried rice. In a wok, using canola and sesame oils, fry “rice” with diced carrots, frozen peas, scallions, a protein (like shrimp or shelled edamame), an egg, grated ginger, soy sauce, and red pepper flakes.
